Garlic Scapes

Garlic Scapes are the flower stalk of the hardneck garlic.

Musical and lyrical in their growth, they are delicious.  My sister calls them “Summer Music”.

Although garlic plants do not flower, they do produce flower stalks. On hardneck garlic, the stalks are known as garlic scapes and they are very tasty and versatile to use in the kitchen.  They will store for a month of so in the refrigerator and can be frozen.

We pick the scapes and use them in our pestos  and garlic scape powders.
